Khatta Meat Recipe Step by Step


  1. Mutton- 650 grams (medium sized pieces) 
  2.  Onions- 3 (chopped)
  3. Cumin seeds- 2 tsp
  4. Cloves - 4
  5. Cardamom- 2
  6. Cinnamon stick- 1 Kasuri methi- 1tbsp
  7. Turmeric- ½ tbsp
  8. Kashmiri Mirch- 1 tbsp
  9. Ginger and garlic- 2 tbsp (minced)
  10. Dry red chillies- 2
  11. Green chillies- 4 (split)
  12. Amchur powder- 3 tbsp
  13. Fennel powder- ½ tbsp
  14. Mustard oil- 2 tbsp
  15. Coriander leaves- 2 stalks (chopped)
  16. Salt- as per your taste


How To Make Khatta Meat

  • Roast cumin seeds and coriander seeds on tawa or pan. Grind them in a grinder along with black and green cardamom, cloves and cinnamon to make fresh Garam Masala.
  • In a heavy bottom pan or pressure cooker add mustard oil and heat to a smoking point. Let it cool a bit.
  • Add onions and fry till onions turn pink.
  • Add ginger garlic paste and cook for another 2-3 minutes.
  • After that add kasoori methi, turmeric and Kashmiri masala.
  • Shred the red chilli and add it with a cup of water. Let it simmer for 2-3 minutes on low flame.
  • Add the pieces of mutton and sauté it with the spices for 7-8 minutes on low flame.
  • Then Add 2-3 cups of water, salt and close the lid of the pressure cooker. Cook for the duration of 3-4 whistles.
  • Once the meat becomes softie, add amchur powder with green chillies and fennel powder (saunf).
  • Stir well and cook for 2-3 minutes on low flame.
  • Garnish the dish with chopped coriander seeds.
  • You can serve the dish with rice, roti.
