Kachri Ki Sabzi
Kachri Ki Sabzi is very popular cuisine of Haryana which is prepared very easily. It is made from chopped Kachri, mustard, cumin seeds, coriander powder and red chili powder and. It just takes 5-10 minutes to be prepared dish.
Mixed Dal is good for health. It is a Protein rich recipe. This is a mixture of Moong Dal, Urad Dal, Chana Dal, Toor Dal and Masoor Dal.From this combination of pulses, Panchratan Dal can be cooked by adding various spices and herbs in it. It is usually served with roti, rice and paratha.
You can also prepared in pure desi Ghee and taste so amazingly good.
Hara Dhania Cholia
Hara Dhania Cholia is unique dish of Haryana. Cholia or green channa made from mixed with other vegetables like onion, carrots, and spices etc. You can serve this dish along with rice or roti. It is great combination of vegetables and cholia which are mixed and later cooked.
Kadhi is a spicy gravy which is made from yogurt and is thickened using gram flour. This dish is cooked on slow is that the folks add fried pakoras (fritters) to the Kadhi making it a perfect Indian comfort food.
Kadhi Pakora is a very delicious and spicy dish prepared with pakoras (gram flour fritters) in a creamy tangy. Cooked tastes so heavenly good that you just can’t miss this lovely dish.
Mithe Chawal (sweet rice) are prepared using basmati rice, ghee, and sugar along with some cardamom and saffron. It is served as a dessert and a snack originating from the Indian subcontinent. Basmati rice is grown best in Haryana. This dish is very famous, and every individual must try it at least once. It is also prepared during special occasion and festival.
Bajara Khichri is so popular in Haryana instead of rice. They are prepared bajara khichri when bajara is soaked overnight. Then Moong daal and bajara are washed together and cooked in a pressure cooker along with spices. We all know that bajara is very good for health.
Bhura Roti Ghee
Bathua is a vegetable or greens, which is also grown in fields without any special labor and care. Bathua Raita is a very healthy and refreshing recipe. They are made from yogurt. To prepare this dish, ingredients like chopped bathua, cumin powder, red chili powder and salt are added to the yogurt. Raita can be served along with almost all meals in Haryana
Malpua is a sweet pancake as a dessert or a snack is very popular in India. It is made and garnished in desi ghee. Usually malpua is served with rabdi (condensed-milk-based sweet dish). They are fluffy and are served hot. It is a very famous dish of Odisha.
Bajra Aloo Roti
Bajara Aloo Roti is another popular Haryana dish. Bajara is consumed in Haryana especially during the winter month as bajara is said to produce warmth in the body. It’s prepared with the mixture of Bajra flour, mashed potatoes, onions, ginger garlic paste, garam masala and coriander leaves to garnish it.The rotis are served hot with butter on top of it. Raita may be served on the side.
Gajar Methi ki Sabzi
This is one of my favorite dish. You can have prepared this dish easily. It is prepared with chopped carrots and methi, cumin seeds, oil, red chilli and turmeric powder. Eating Gajar Methi ki Sabzi with Hot Chapati is just a deadly combination.
Kachi Lassi is little different from the normal Lassi as yogurt is not used in it. This is prepared with milk, chilled water and rose syrup, sugar and ice cubes. This Kachi Lassi is so tasty you can take this drink it daily.
Without the Sweet Rice Pudding, the cuisine of Haryana would remain incomplete. It’s prepared with milk, rice, sugar, cardamoms, raisins and nuts. Kheer is perfect to complete the Cuisine of Haryana with sweet Tooth.
